Ramborn Farmhouse is a tribute to the way cider (or ‘viez’) has been made in this part of the world for centuries – it’s a very dry, lightly sparkling, almost wine-like cider with a distinctive, refreshing sharpness.

 

It features three local apple varieties with high levels of tannins and natural acidity, making them perfect for cider-making: Erbachhofer, Holzapfel, and Wiesenapfel.

Luxembourg’s own traditional apple varieties have been expertly combined with the ancient, tannin-rich cider apples hailing from England’s West Country.

 

The result is a bright, refreshing medium-dry cider.

Perry

Ramborn Perry is made with pears from very old traditional orchards, including Bongert Altenhoven in Bettenbourg.

It was created as part of Ramborn’s commitment to protecting and reviving the many unique varieties of fruit that grow in the region.

 

These traditional pear varieties – including Mostbirne and Nelchesbirne – have been carefully selected and pressed to create a perry rich in tannins, and full of subtle fruit flavour.

Avalon 2015

Fermented with selected white wine yeast, the resulting cider has been expertly blended to create the fine still cider you find in this bottle.

In the 2015 harvest, we wanted to explore some of Luxembourg’s forgotten orchards. As part of this exploration, we stumbled upon two neighbouring orchards that were home to 82 different apple varieties. When it came to pressing the apples, we kept their juice separate; we were curious to see what sort of cider they would make. Fermented with selected white wine yeast, the resulting cider has been expertly blended to create the fine still cider you find in this bottle.

 

Pair with a minerally goat’s cheese to bring out Avalon’s wine-like characteristics, or a stronger, aged cow’s cheese to compliment the more cidery notes.

We have taken some of our Luxembourgish cider and infused it with American-grown whole-cone Cascade hops.

We have taken some of our Luxembourgish cider and infused it with American-grown whole-cone Cascade hops. Cascade hails from Oregon in the USA’s Pacific Northwest. First released in 1971, it is loved by craft brewers the world over for its signature citrus/floral aroma.

We specially selected a base cider to bring out the full characteristics of Cascade, which in turn compliments the crisp acidity of our traditional cider apples.

Erbachhofer is a small apple with firm, aromatic flesh, and a balance between sweetness, acidity and just a hint of tannin that makes it one of the Sauer valley’s most distinctive cider apples.

2016 was such a bountiful year for the Erbachhofer that we were able to ferment some of its juice as a single variety cider. The result is presented here as a full-juice, still cider, lightly backsweetened to bring out the full character of one of our favourite local apple varieties.
